Is there some reason as to why I cant change the base plate size? It will allow me to change all the projections and thickness but it blocks out the width and length.

please see the pictures attached they point out that while using projection you can create a square base plate by entering one dimension that projects from the corners of the column.
If you want to create a rectangular base plate you can use "Total" so that Length and width are made available to you.
