When labelling the main part on an assembly drawing the mark reference
is the assembly mark rather than the fittings mark, is there a way to mark the
fittings mark not the assembly mark?

Once your label is inserted (and shows the assembly mark), change its properties (e.g. double-click on the label) and use the token "Single part mark" instead of the token "Main part mark".
